We love to make Eggplant Parm. or Zuchini Parm. as a casserole. Make or by your sauce of choice, slice your veggie of choice into 1/4" rounds and layer sauce, veggie, mozzarella cheese, repeat until gone. Bake at 350 for 40 mins. or until cheese is bubbly. We have also mixed more veggies in with the sauce like spinach, mushrooms, onions, kale- anything you want! It's so easy and lasts a few meals!
